Hearty Chicken Enchilada Soup

  • 7 Tbsp. Homemade Gourmet Chicken Enchilada Soup Mix
  • 2 15oz cans diced tomatoes, drained
  • 1 150z whole kernel corn, drained
  • 2 cups cooked chicken, diced or shredded
  • 1 2.25oz can sliced black olives, drained
  • 4 cups water
  • 1 cup milk

Pour all ingredients into 2 1/2 quart soup pot. Bring to a boil, reduce heat to low and simmer for 20 minutes.

Serve hot with your favorite chips and sour cream.
