Quick Dinner Rolls

Yields 12

  • 2 Tbsp yeast
  • 1 cup + 2 Tbsp warm water
  • 1/3 cup oil
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp salt
  • 3-3 1/2 cups flour (can use half wheat and half white)

Dissolve yeast in water. Add oil and sugar. Let stand 5 minutes. Add egg and flour to make soft dough. Knead 3-5 minutes. Do not let rise. Shape into 12 balls. Place 1 1/2 inches apart on a greased cookie sheet. Cover and let rise for 10 minutes (while oven is heating). Bake at 425 degrees for 8-12 minutes or until golden brown. Cool on wire rack. Butter tops of rolls while still warm.

For Variety: Add herbs and cottage cheese, pumpkin and pumpkin spice or raisins and cinnamon.
