These are some very simple side dishes. They are also healthy for you since they use olive oil and veggies.

This first simple side dish is packed with veggies and has a very good flavor. The hardest part of making it is chopping the veggies. My family loved it, especially my hubby. Just make sure the veggies are cooked tender before serving. Click here for the recipe.

The second simple side dish is Smashed Red Potatoes. This is a healthier alternative to your traditional smashed potatoes. You use olive oil instead of milk and butter. It tastes soooo…. good too! My family had no trouble eating it up. Here is the recipe for you to print and try yourself.
